One of my tried and true recipes. I do this in the slow cooker; sauté onion briefly, add all ing except vinegar to crockpot, add extra broth if desired and cook on high for 3 hrs. Taste to adjust seasonings and add vinegar. I often use madras curry paste for the spice. Very easy and delicious as a soup or stew.
