Son and I really enjoyed this one. Hubby didn't much care for it and I was surprised since he usually loves cheese grits and he likes cracklings and country ham. We're lucky in that we can get cracklings in our local grocery store so I used those instead of the optional bacon which I think would be good also. I made a half recipe to serve 3 to 4. Perfect size for three. Mix of Parmesan and cheddar was nice in this one. I loved the creaminess of the grits along with the slightly tangy tomatoes and crispy cracklings and the ever so salty country ham. I did have to cook my stone ground grits much longer that what the instructions said since it takes almost an hour to get them done. Also not sure if it was because I halved the recipe but the grits got really dry fast during the water part of the cooking. They moistened back up and were perfectly creamy after the milk stage of cooking.
