Recipe Review

Tender and flavorful! Fresh cranberries really pop - they are encased in a slightly sweet, buttery, flaky scone matrix, with a large dose of lemon zest.
I replaced the 1C heavy cream with 1/2 C heavy cream + 1/2 C non-fat milk. I also used my microplane to zest the lemons (2 standard, not meyer). Otherwise I stuck to the scone recipe carefully.
The dough was really wet. I was so tempted to work a bit more flour into it, but I resisted. Because they are so wet, after cutting the shape, they slumped into a fairly random shape. However, they baked up beautifully! I baked them for 15 minutes (recipe says 15-20).
I wish there were a low fat version of this recipe. It tastes so good!

Thanks for the reminder of this recipe now that cranberries are back in season.

Yes, the cranberry season is all too fleeting. Last year I missed it, so this year I bought a big bag at costco. This is a good, albeit high fat, way to enjoy them.
