Simple and satisfying.
This recipe calls for canned peaches, topped with a yellow cake mix (dry), and butter, and a sprinkle of cinnamon. I modified it by using fresh rhubarb, which I cooked separately to make into a rather thick semi-cooked rhubarb compote (sweetened). I placed this in the bottom of the dutch oven, and also added about 1 T tapioca (instant) to be sure it would thicken up.
In spite of my low expectations, this came out with a wonderful crunchy top, and the thick rhubarb layer had moistened the cake mix so it was very tasty. Even those who dislike rhubarb loved it.
The recipe says served 8, but we managed to serve reasonable sized portions to 12. I think it was enough because I used a lot of fruit - 4 inches maybe in the bottom of the dutch oven. The instructions - briquettes on top (10) and underneath allowed it to be perfectly cooked in the specified 45 minutes.
It begged for vanilla ice cream, but was fine au natural.
