It's the first time my daughter has eaten anything with zucchini in it. Yay!

My Mom used to make zucchini loaf when I was little. I wouldn't eat zucchini's so she told me it wasn't really made with zucchini, it was just the name. It took me yeeeaaars to figure that one out.

My mom made zucchini loaf when we were kids too and I wasn't a huge fan. I've just recently started cooking and baking with zucchini and am enjoying learning about different uses for it. It has a pretty mild flavour.

I've been having a lot of fun baking with zucchini this summer. However, I now have a less creative new solution to the over-abundance of zucchini problem - I recently got chickens and they love the stuff!

How can you have too much zucchini? I want to have an over-abundance of zucchini problem. I would make soooo much zuccini loaf and raw pasta!

I've actually started to really enjoy the zucchini, surprise-surprise! I've been making a simple tomato based pasta sauce with eggplant and zucchini and it's so yummy.
