I'm really happy with this creamy, comforting, warm spread with a slight smoky undertone from the browned eggplant. Bean dips and spreads are definitely one of my top comfort foods and they always go well on toast for a quick snack.

Thanks ladies! the photo on my blog is kind of beige but bean dips never look as good as they taste! I should upload the picture here too.
QS, I'm sure you could use regular Italian eggplant, just maybe 1/3 or 1/2 depending on the size.
