Tender, intense peanut flavor, and with that perfect salty kick. Its been years since I've made peanut butter cookies, but I could tell this recipe was different. A comparison with Joy of Cooking revealed two major differences: no added butter, and almost no flour!

The batter is very sticky, but resist the temptation to add more flour. Take the cookies out of the oven and very carefully transfer to a cooking rack. The cookies are very delicate, but they firm up upon cooling, and have a delightful texture.

I did not have the chopped salted peanuts, and so skipped them - no problem. I also tried making these with a few chocolate chips on top, and a pinch of salt. But you cannot improve on simplicity, the regular cookies with no additions were the best.

These sound great. I love the flour less PB cookies my daughter makes with a sprinkle of fleur de sel on top. Love the photo too.

Thanks Southercooker - I got lucky with that picture. The batch of cookies lasted less than an hour (so I guess we are lucky it only made 24). I love a bit of salt with my sweet, and hope to try more recipes before I need to return this book to the library.
