Crunchy and sweet, with a definite salty edge. I selected this recipe to prepare for my DH for Valentine's day, but to my dismay, the dried cherries had become high protein (i.e. buggy). I substituted golden raisins.
The oats and coconut are coated with a honey-maple syrup-brown sugar-vanilla mixture (cooked down a bit), baked 15 minutes. Then the fruit (raisins, cocoa nibs) are added, and its baked for an additional 15 minutes.
The granola became significant crunchier after cooling, and the fruit was not fossilized. The cocoa nibs are pretty subtle, but I do like the overall flavor.
