An amazingly good soup - we can only imagine having it with seasonally fresh zucchini!
Shredded zucchini and onions are gently sautéed for a long time (40 minutes) - this really did bring out the sweetness of the vegetables. Following this, sour cream, mint, chicken stock, and sharp cheddar cheese are added.
The resulting flavor was both rich and light at the same time. The mint was really amazing. Bowls were served with a single leaf floating in it - and the best bite included that mint leaf.
We will definitely prepare this again.
