Very simple to make, this salad is a great sandwich filler (or, as in my case, great for on top of a cracker). I love chickpeas, but one of my culinary faults is that I'm not a fan of olives. This recipe takes chickpeas, olives, diced onion, lemon juice, smashes it up, and adds salt, pepper, and olive oil. The flavors were well balanced. I diced the olives instead to thinly slicing - so I wouldn't get too big n olive bite. I considered omitting the olives, but I think they give this dish an important base note flavor.
