Hubby and I loved this soup. This book is filled with soups from famous chefs, cookbooks and restaurants. This particular soup is from Charlie Trotter Cooks at Home Cookbook. Love the flavors and textures. Bacon is sautéed then onions and carrots added and then the lentils and half the chicken stock. The soup is then simmered and later the other half of the stock and some seasonings are added for a brief cooking time. After ladling into bowls some crispy pieces of bacon and green onions top the soup.

I served ours with Jalepeno Corn Muffins from Virginia Willis' Basic to Brilliant Y'All. They were great together. Wonderful supper on a rainy cool night.
