Powerful strong flavors in this pesto really work! The beautiful garlic scapes at the farmer's market were so appealing, I purchased some without knowing what I'd do with them. This recipe seemed like just the ticket. Garlic scapes are blended with almonds, olive oil, and Parmesan cheese. I served this on bow-tie pasta.

As I tasted the pesto to adjust the flavoring, and was amazed at the strong and peppery flavor. However, everyone, including the teenagers, really enjoyed it.

Garlic scapes are a fleeting spring food - grab some up - you will enjoy this dish.

I'd never heard the term garlic scrapes and had to google it. They sound good. I've seen them on my Mom and MIL"s garlic but didn't' know they were edible. Thanks for enlightening me. Now I want some too. LOL
