I love imitation crab salad but wanted a less calorie recipe. This one is quiet good and only 95 calories for a heaping cup. It's loaded with fresh from the garden cukes, imitation crab, and bell pepper. She calls for red but since I had some beautiful baby ones I used one each of red, yellow and orange. This is a nice salad to look at as well as eat. The dressing is cold water, rice wine vinegar, low sodium soy sauce, lime juice and a couple of no calorie sweetener packets. I'm sure if you're opposed to the latter you could use a sprinkle of sugar.
