After both the Ginger and Coriander Marinated Fish and the Prawn Fried Rice were such failures, DH actually wanted to never touch this magazine again.
Luckily, I was able to convince him to give it one more last try, because this dish was actually quite nice. DH had made merengues, and because we used them warm, and also warm raspberries and apricots, the whipped cream just melted and made a wonderful dessert. It was much too sweet, though, and we didn't even use the brown sugar for the apricots.
The other thing I would criticize about this dessert, and you will probably call me a nitpicker, is that this just wasn't Eton Mess - and with the recipe that simple, I think they should get the basics right. Eton Mess is traditionally prepared with fresh, possibly slightly mashed, uncooked strawberries - not a syrup of cooked raspberries. It's not like I mind variation, but why not indicate that in the title? 'Raspberry Eton Mess with Chargrilled Apricots', anyone?
