The only thing I didn't like about this one was that the fresh mushrooms that were on the top got a bit dried out. Next time I would sauté them first and add them to the top of the meatloaf near the end of cooking time. The potatoes O'Brien were really good and surprisingly not overcooked. They were placed underneath the meatloaf before cooking. I used a meatloaf pan to shape my meat mixture before adding it to the slow cooker.
