I like pease pudding (usually cold with ham in a stotty cake when I'm working up in Newcastle) so I don't know why I've never made it before. This recipe is very simple and tasted good, but had a dry crumbly texture (definitely wouldn't have made a good sandwich). However I baked it in a fairly shallow dish, rather than steaming it in a pudding basin in the traditional style, and this probably had a significant effect - I shall try the recipe again before writing it off.
I added shredded ham, a little flour and water to half the leftovers and made Pea and Ham Fritters which were very tasty. I shall add spices, gram flour and egg to the rest and make Split Pea Felafel.
