This is a side but it is so good and filling that it could also be a main course. My daughter requested this for her birthday supper this year. This is probably not a mac and cheese you'd want to eat often but is a great celebratory dish. It's cheesy from Parmesan, Gruyere, Fontina (my store didn't have so we used Gouda, since PW says you can substitute your favorite cheeses, and Goat cheese. To help make this over the top fancy it also contains oven roasted mushrooms (I used Baby Bella), crumbled bacon, caramelized onions and Gorgonzola. It gets some richness from whole milk, 1/2 and 1/2 and 2 beaten eggs. This makes alot but it's so good.
