I have a confession to make I messed up this cake but my family said it was still good. My plans were to make this for my friend and co-worker's birthday and to take it to work tomorrow. Since I goofed I decided to wait and make her another one later in the week. The cake called for a syrup of 1/2 cup confectioners' sugar and 1/2 cup lime juice to be poured over the warm cake. Then there is an optional cream cheese frosting recipe that can be made and also spread over that. The frosting consists of butter, cream cheese and a pound box of confectioners' sugar. Well you probably get the idea but I was making several test recipes and working on some recipes for later in the week while I was waiting for the cake to bake. Instead of putting a half cup of sugar with the lime juice I dumped in the whole pound box I had sitting on the counter. Needless to say the cake is very sweet but the lime juice as well as the lime jello and OJ in the cake helped to balance it out a bit. I opted not to put on the frosting as I didn't think it needed more sugar.
