So colorful and delicous! These burritos are filled with butternut squash, sweet onions, red bell pepper, brown rice, and just a tiny bit of cheese. It takes quite a while to prepare the squash and rice, but these steps could be done the night before (as I did). Even the skeptics enjoyed these, and they are very healthy.

I might try these. I admit I avoid squash recipes sometimes, because squash is such a pain to work with. My supermarket started offering it already peeled and cubed though, so now I have no excuse.

Thanks for reminding me about this review. I sometimes substitute yams for squash, but i do prefer a tasty butternut. If you make them, and especially if you modify the recipe, do let use know.
