These were good but hubby and I both thought they were a bit heavy tasting. I could only eat a half waffle even though I'm normally a big eater. Hubby also just ate a little over a half. I served them with maple syrup as suggested and also added some strawberries since I like fruit with my waffles.

This review reminds me of when my husband and I were first married (many yrs ago). We would first cook an entire strip of bacon in the waffle iron, then add the waffle batter. They were delicious, but heavy. Do these have little bacon pieces? Too bad they weren't better, as the concept - and adding black pepper, sounds good to me this morning.

QS, you put freshly ground black pepper on your bacon before cooking in the oven and yes you break the bacon into pieces and then add more black pepper to the batter. I think had I added a little more buttermilk they might not have been so heavy tasting but I'm not sure. My batter was very thick. Also maybe I over-mixed the batter a bit. Wondering if that could have made them so heavy tasting.

Precooking the bacon is a good idea. Our youthful zeal for experimentation means that the bacon grease was cooked right into the waffle. It was wonderful, but I'd NEVER do it again today.
