This was a simple plate of grilled scallops on a spinach salad with pickled onion garnish that makes a great appetizer or with a more generous portion, a light main.

Typical of some restaurateurs' cookbooks, you’re asked to make vats of brine and dressing for small amounts of food. I made ¼ of each of those recipes and that worked out well.

The flavours of the dish were quite surprising but delicious with the sour pickled onions enhancing the sweetness of the scallops and adding a pleasant crunch.
