Hard to decide how to rate it. It was very delicious, only that we didn't manage to get mutton and had to use lamb instead; the flavour of lamb is much less intense, of course, and so it was pretty much superseded by everything else.
I actually served two salsas, one with raw onions as instructed, and one with roasted onions as I don't like raw onions. Both of us preferred the latter as the raw onions were too strong for the dish; however, that might have been different if we used sweet red onions as instructed instead of normal white ones.
We served it together with buttery couscous and Za'louk made with homemade Harissa, an excellent choice.
