Carla gives you the choice to use ground turkey or chicken and since ground turkey was a dollar a pound cheaper when I decided to make these for my daughter and I, I went with turkey. The spicy mayo for these is great on these burgers but my son also loved it on beef burgers and I agree. I'll be making this mayo for other sandwiches as it has a nice kick. The celery and blue cheese slaw is also great on the burgers and alone. These burgers were so moist and delicious from the onion and garlic that was sauteed in butter and olive oil and added to the ground meat before forming the patties.
