To speed things up I cooked the filling in a pressure cooker (25 mins), rather than in the oven for 2 hours. The mixture was then reduced to thicken it a little. Rather than one large pie I made 6 pies in ramekins with puff pastry lids. As I not a fan of sage I replaced it with flat-leaf parsley, but would probably opt for rosemary next time.
