A good way to expand one sausage into a full meal. I made a single oval cutlet using 70g of sausage meat and 100g of cooked lentils; it came out a little crumbly, probably because of the preponderance of lentils, but tasted fine. The author is very keen on caraway seeds and yoghurt but doesn't include either in this recipe - I think a little crushed caraway in the cutlet and a yoghurt-based sauce would be worth a try.
