I made this recipe specifically to go with Ice Cream Sandwiches (p 325). The recipe is super simple to put together with only a few ingredients.
The recipe states to roll out the dough right out of the fridge, but I found this nearly impossible. The dough was so hard and just cracked. I needed to wait about 20 minutes for the dough to soften to roll the dough out effectively. Also, cooking time was more like 15-20 minutes instead of 10-12.

Even though there were some hiccups, I love all the tricks I learned in the process about controlling the temperature of cookie dough so it could be cut and manipulated and baked correctly.

These were the perfect cookies for Ice Cream Sandwiches with just enough softness to accommodate ice cream without cracking and breaking. As for the actual cookie itself plain, it was an average chocolate cookie. I probably won’t make this recipe for anything but ice cream sandwiches.
