These were an unexpected treat! The texture is interesting - simultaneously crunchy from the cornflakes, and chewy thanks to a handful of oats. I omitted the coconut and added pecans, but I am sure it would be great as written. These cookies came out a bit puffier than I usually prefer, perhaps due to over mixing, but I really enjoyed them none the less.
