This is a vegetarian version of mac and cheese. We did do a few substitutions. hubby and son won't eat cilantro (they have the gene that makes it taste like soap), so we used flat leaf parsley instead. I only had 2% milk on hand so we used that instead of whole. We couldn't find flax seed tortilla chips so we got multi-grain. Rachael did suggest any specialty tortilla chip if you couldn't find flax seed ones.
This was alright but none of us really liked it enough to make it again. At first I forgot to serve the sour cream along side. We had already taken a few bites each when I remembered it. We did think it was a bit better with the sour cream stirred in. I'm glad we tried it but it's not one I'd make again for our tastes.
