The flavor of these cookies were very good and I think I really like this gluten free flour blend, however, I had to add more flour and oats after the first batch came out super thin (like oatmeal lace cookies). The caramelized edges were heavenly, but I was looking for a chunkier, moist and chewy cookie. I am giving this recipe the benefit of the doubt (and 4 stars) because I did stray in my choice of fruit- I used fresh diced apples for the 1/2 cup raisins which certainly added moisture and perhaps caused my cookies to spread.
The second batch with added flour (3 tablespoons) and oats (2 heaping tablespoons) were much more substantial, chewy and delicious.
