My husband and I really enjoyed these beans. Unfortunately, because I didn't have the required light molasses, I had to use a very strongly flavoured dark molasses and my daughter couldn't get past the overpowering smell and flavour. I cut the amount in half and added some agave nectar to replace it but it did not mask the strong smell. I will definitely have to re-stock my pantry because these simple baked beans were very satisfying and we enjoyed them paired with fluffy steamed rice and veggies.
This is a fairly quick recipe to put together and then throw in the oven for an hour while you prepare the rest of your meal.

With all the talk about this recipe I was going to make it, but I only have dark molasses. I was wondering about subbing it in anyway so thanks for the heads up on that. Looks like I will have to go in search of a light one. Do you think a different liquid sweetener would work. I've never tasted light molasses before so I'm not sire about the flavour.

Jayme - you don't actually need anything called "light" molasses. You just want something that doesn't say dark or blackstrap. Regular molasses is just fine.

I know I used dark molasses in mine, and I liked the flavor. One way to cut the molasses flavor while keeping the sweetness might be to use part molasses and part dark corn syrup. That wouldn't affect the liquid levels.

We had leftover beans with steak for dinner tonight. They warmed up nicely in the microwave.

Jayme, I may be in the minority with the molasses problem. I liked the recipe and so did my husband but my daughter found the molasses flavour really too strong. So maybe it's not an issue for an adult palate. You could always try half maple syrup or agave nectar and half molasses if you're worried. :-)

I love leftover beans in sauce. I had some tonight too from a different recipe and threw them into my veggie stir fry at the last minute. It was good!

Oh, I didn't catch that it was only your daughter who didn't like it the first time I read that! I love molasses so I should really just go ahead and make this. And it's good to know that it's just saying no blackstrap molasses. I can't remember what kind of molasses I have and I'm too lazy ti check right now, but I'm going to go ahead and join the bean party in the next day or two. These sound so yummy!

You all have me hungry for these, I'll have to make them again. My kids actually fought over who would get to eat these as leftovers. Amazing!
