This salad was just splendid -- and pretty healthy except for the cup of goat cheese.. I'd never cooked farro before and after my experience with quinoa I wasn't expecting much. Still -- I enjoy trying ingredients that are new to me, and ran across this recipe while searching the Saveur website for another recipe.
The salad combines farro, blanched green beans, raw corn and scallions dressed with a white wine (and no oil) "vinaigrette". The vinaigrette recipe called for marjoram which my grocery store didn't have so I substituted fresh oregano which was just fine. Once the ingredients have been dressed with the vinaigrette, a cup of crumbled fresh goat cheese is added. Unusual and delicious even if it is not the prettiest plate on the buffet.
