This woman speaks my language! Growing up in South Texas I know the difference between San Antonio Style and Houston Style Flour Tortillas and she has excellent recipes for both. The S.A. tortillas are my usual recipe but I wanted a thinner/less puffy tortilla for fajitas. These are made with 4 simple ingredients - flour, water, lard and salt, but the sum is worth more than the parts here. These are slightly flakey with the tiniest bit of stretch, and since there is no leavener (baking powder) they are not as thick or puffy as the SA style.
