This makes an excellent meatless Monday selection. I served over garlic Jasmine rice and it was delicious. I made this recipe in an on line cookbook club and some members who had tried this recipe before me mentioned it lacked flavor. I decided to replace the veggie broth with Better Than Bouillon Mushroom Broth and I think that worked great.
