As promised - a dozen soft and chewy cookies with a great flavor. I used fresh ginger (about 3/4 of an inch worth) since I was out of the powdered stuff.

Made these again and was less impressed. Perhaps because I did not use as much fresh ginger? Maybe I baked too long, the full, recommended 12 minutes? Or maybe since the last cookie of this type I made was so outstanding (Princeton Gingersnaps) that these couldn't measure up? I do love that this is a small batch recipe and I'm sure I'll make them again (w/ fresh ginger) but this second time around they were only "3 star" cookies so I'll bump a star and call it even.
