Flavors from cilantro, red onion and jalapeno contrast with sweet corn and red pepper... the final dimension is the tang of the lemon and lime. A delicious and addictive healthy grain salad. I add a little lemon zest because I love lemons and a can of black beans to turn it into a vegetarian entree.
