Quick and fresh tasting.
I selected this recipe because I could make it with all local ingredients (except the olive oil and some spices). As a bonus, it was quick.
The recipe called for red bell peppers. Only one of my peppers was half red, the other green. It would have been tastier had they been all red.
This recipe uses onions, peppers, tomatoes, sautéed, with spices, and at the end some beaten eggs are mixed in. Its a nice way to get protein and vegetables, and its very fresh. Its "3" means good - just not amazing.
