Simple but good. We actually cut the leeks into small rings (about half a cm), but either would probably be nice.
Served with grilled salmon and celeriac mash - next time I would make a celeriac-potato mash, but otherwise a great way to get rid of leftover vegetables from making soup!

I remember how wonderfully plentiful the leeks are in europe -- and at a good price, too. This does sound rather nice.

It also happens to be the first dish I was taught to prepare own my own - it's that easy (and foolproof). I guess I'm taking them for granted, I can't imagine them not being available easily. What about Utah, are they easy to get?

They are available but very expensive. More than 10X the cost of a regular onion. One bunch of 3-4 leeks often costs $4.00.
I do love leeks, but for me they are a splurge.

Wow, that's a huge difference! I'm assuming that's due to climate differences between Utah and my corner of Europe. What kinds of vegetables would you get for good value?
One thing I noticed when I was in the States this summer (in California) is that in general there you can also get more varieties of certain vegetables, ie. purple sprouting broccoli, a lot of different kinds of tomatoes, etc.

Leeks are pricey here too--east coast of the States. But in the spring, there is a wonderful variety of onions available at the farmers' markets. And we do have dozens of varieties of tomatoes all summer. Now (almost winter), we have lots of different apples and pears that are locally grown and tons of root veg also local, lots of varieties of potatoes, etc.

I think that local foods have become important all across the US, and the values might depend on locale. Right now potatoes, sweet potatoes/yams, and regular onions are economical, as are the fall squashes. I can also buy really excellent pork from a local farm, though the logistics are a bit complicated -- more planning required than just a trip to the supermarket.
