Vegetarian Cooking for Everyone

I know this book gets great reviews, but I find that I don't cook very much out of it. I check it out for basic information on grains, beans, and vegetables but the actual recipes are so plain, I rarely use them.
The other quibble I have is the color of the text and the paper. I find the contrast too little, especially for the notes, which are printed in brown italic, and the paper is cream coloured.

This is a fantastic cookbook. I haven't had anything turn out badly and I've been using it for many years. It has recipes and suggestions for cooking very simple, basic dishes as well as more complex and interesting recipes. The only thing that I don't like about this book is that there are a handful of recipes that call for less common ingredients that I probably won't use too much. Also, she's apparently a big fan of parsley (I hate the stuff so I always leave it out).
I strongly recommend this book if you join a CSA and find yourself with a pile of vegetables that you've never worked with before. Have a heap of endives? There's a recipe in here somewhere for you.
This is, by far, the most weathered and tattered book in my kitchen. It is filled from cover to cover with accessible, delicious and everyday meals that can please vegetarians and omnivores alike.
I've been cooking from it for over 10 years and I still find, on occasion, lovely little surprises.
