Any spiralizer fans out there?
Silly gimmicky things IMO. Though one would probably be easier than a mandolin slicer where very finely sliced zucchini, for example, is called for.

A New Book of Middle Eastern Food vs A Book of Middle Eastern Food
The New Book is really the same book, just updated slightly - go ahead and buy it.

Cooking in a vacation rental
There's been a lot of discussion about this in The Guardian lately! Seems it's a problem all over the world. Tell me about it! There is never a decent knife. There's usually a microwave but there may well be no microwaveable jugs or …

cooking NYT vs EatYourBooks
I'm an EYB member and I find it very useful both for tracking down recipes that I know I've got somewhere (doesn't help with older, unindexed books) and for general inspiration, say if somebody has given me a bag of some fruit I don…

Best cookbook for beans?
I could not live without my pressure cookers - I have two, a 6 litre and a 4.5. They are excellent for beans and chickpeas, you can cook a quantity then freeze for later instead of using cans.

Best cookbook for beans?
I can recommend Grains by Molly Brown. It has lots of recipes for beans and lentils. I started cooking more beans and lentils a few years ago in an effort to lower my bad cholesterol. It worked, and I actually enjoy the food!

What new kitchen gear do you hope to get this holiday?
The Alligator just does very small dice, looks very like yours. The Progressive has interchangeable grids and does bigger dice in two sizes, and slices about 1.5mm thick. I also have a mandoline (and one of those protective gloves!), and a rotary ch…

What new kitchen gear do you hope to get this holiday?
Funny, I gave up on the box grater in favour of a selection of Microplanes! If you want kitchen kit, you've really got to buy it yourself unless you can specify the exact make and model. Anyway, going to the shop is fun in itself. My latest g…

Battle of the (taste) Buds
I am trying to visualise a 7.5 kg pork shoulder - that's a pretty big pig! If you cooked it three different ways, I presume that means it was cut into three pieces. My word, unless you were cooking for a crowd you must have had pork coming out…

I do have Off The Shelf, it's very useful. I believe she's becoming available in US editions. Apart from Julia Child my most owned in compatible editions would be Rose Levy Berenbaum's Cake Bible and Pie and Pastry Bible (but I'…

There are two problems with American cookbooks. The major one is measurements. It's not that they use imperial, it's that they use Fanny Farmer, which with many ingredients just cannot be converted from volume to weight. You can wing it wi…

Best-of-the-year cookbook lists for 2014
I always start with the butcher and proceed to plan from there. Main meals really depend on what they've got. I do sometimes get a fancy for something in particular, but you've got to be flexible - if I want oxtail there won't be any,…

Yotam Ottolenghi seems to be taking over the known universe at the moment. Personally I think he's over-rated, but I do own Plenty and Jerusalem. I have some of his other recipes courtesy of The Guardian.

There is a problem with induction. I have gas hotplates, but for various reasons have acquired a portable induction hotplate. Thirty years ago I bought a set of Swiss Spring saucepans, expensive but a lifetime investment. However, un they don't…

What makes a cookbook a clunker and what do you do with them?
If an otherwise dud book has just one good recipe, it occurs to me that one could transcribe it (in my case to the recipe app on my iPad) and then dispose of the book. I haven't actually done this, of course.

17,000 reviews - by end of November 2014?
Never had a stand mixer? Good heavens! When I got married - in 1977 - my father presented me with a Sunbeam Mixmaster without being asked, as Mum had had one since she got married. That and her Krups balance scales were as essential as the oven, she…

While on the subject of kitchen equipment, I have just bought a Magimix Patissier Multifunction. This looks like a food processor, has the same footprint, but has attachments and extra bowls which means it also performs as a stand mixer and blender.…

A lot of those reviews aren't really reviews within the meaning of the act, just listings. That said, I am making an effort to catch up.

I'm all in favour of using Solomon's book which, since she is an Australian, is readily available. I have her Complete Vegetarian Cookbook which is wonderful and is actually in two sections, European and Asian.

It was indeed Fanny Farmer back in the 1890s. She wasn't a trained cook herself and she wanted people with little training and limited equipment to have certainty that the recipes would turn out the same every time. Her system caught on, but wa…
