Lovely way to serve peaches when they're at their peak….it’s like a sweet, juicy fruit crisp for a fraction of the effort.
Halved fresh peaches are topped with crushed, almond-flavoured amaretti cookies – easy to crush without hauling out heavy machinery - a sprinkling of sugar and a tiny dot of butter. I baked them outside on the grill in a foil-covered pan, which worked out very well. Don’t forget to butter the pan so the peaches and the caramel that forms don’t stick (can you tell I missed this step?)!
I used beautiful local peaches which were a little smaller than what the author recommended so they baked in less time. I served 1 peach/person, instead of a half, with a dollop of mascarpone but the whipped cream the author suggests, ice cream or crème frâiche would work well also.
Edit: This dessert needs to be served shortly after baking (while still warm) as the amaretti crumbs absorb the peach juices and get soft in time.

This sounds great! I love using Amaretti cookies - my daughter always convinces me we need the biggest bag we can find - even if my recipe only calls for 2 T. Nobody ever complains!
Our local peaches have not come in yet, but I'l keep this in mind for when they do. Thanks for posting.

I'm with your daughter - I love those cookies! And they went particularly well with this fruit.....and with coffee, with a cold glass of milk, on their own.....
Our peaches are about 2 weeks early this year....a little on the small side but juicy and delicious.
