Quick and easy, flourless, chocolate-almond cake made entirely in the food processor.
The almond flavour comes from 2 sources: nuts and crunchy amaretti cookies. These are ground together in the food processor first, then added into the creamed butter/sugar/egg mixture (also mixed in the processor) along with some melted chocolate.
The finished cake is moist with a good balance of chocolate and almond flavours with a hint of orange. I thought it a little on the sweet side but that was rectified with a dusting of unsweetened cocoa powder.
Quite elegant for so little effort but easy enough for a casual dinner.
