A "couldn't be simpler" summer main course. Salmon is "bundled" with tomatoes and olives in some heavy duty foil and placed on a hot grill for about 8 minutes. Result is a very tasty (and perfectly cooked) piece of fish. Nice for casual entertaining because all the prep can be done before guests arrive. Next time, I will try using Italian seasoning in the tomato-olive mixture as saffron is not at the top of my "favorite spices" mix.
