This is a delicious sandwich, and we wish we could give it a 4.5 rating.
We used a regular yellow onion and a red bell pepper, but skipped the cayenne pepper. The recipe suggests serving this on corn bread, which would be excellent, but because we didn't have any, we substituted ciabatta. The recipe calls for a mild white cheese, and we used gruyere.
The recipe suggests that you turn off the heat when you add the bell pepper. We thought that would make the pepper be too crunchy, so instead we turned the heat up, and cooked it for about 3 minutes.
The cheese was perfect with the bread, and the red bell peppers gave a nice sweet flavor. The ciabatta is very understated, and we will probably try this again with corn bread. Yum.
