Don't make this if you're watching your fat intake. Slightly smoky, slightly nutty: Adding sesame oil to home-made mayonnaise is a stroke of genius that transforms the mayonnaise from just good homemade mayonnaise to eat-straight-from-the-jar delicious.
I prefer this one with lemon juice instead of vinegar, although I might try it with rice vinegar some time. Other neutral oils can be used instead of safflower.
