friederike from Berlin,
Very interesting and unusual dressing! It takes a little more effort than the usual dressing - you need to caramelise the sugar, add the other ingredients, dissolve the caramel, puree the whole thing and then season. I used half the amount of mango/orange juice, and that was entirely fine.
I'm not yet entirely sure it's worth the effort unless you have too much time on your hands - then again, it'll give you approximately 500ml of dressing or more, which is a week's worth of salad dressing for us.
We used the dressing with chicory salad today, a nice combination, especially as I left the mango sauce slightly sweet. We might try it with a green leaf salad later this week.
Edited to add:
The dressing holds very well in the fridge - ours survived approximately ten days, covering five or six serving for two. Which actually means that it is worth the extra effort, I've rarely had some much good salad in one and a half weeks. And it's very nice with any kind of green salad!
I had been careful with the chillis as I was afraid the dressing might become hotter in time, but that didn't happen.
