Fantastic way to serve a sweet potato! Its flavour wasn’t hidden but complemented by tangy sour cream and goat cheese, hot chiles and garlic.
I prepared all of the topping ingredients, which included baked sweet potatoes which I made in the microwave, and used a half batch of this quick puff pastry. Once I rolled the pastry out to the required thickness, my rectangles were slightly larger than instructed. Even so, I couldn’t fit all of the topping ingredients on the pastry and ended up using only half.
Had I known how delicious and well-received these would be, I would have defrosted the rest of the pastry and made a second batch immediately.
