These were delicious. Loaded with flavor and a hint of heat from the pickled jalapeƱo peppers. I used home cooked pintos and fire roasted tomatoes. My daughter and I topped ours with cilantro but most of the rest of the family left it off theirs. My sister grilled the Grilled Chicken Thighs from page 172 which I marinated with tangy Yucatecan spices and we served it with the seasonal veg (for spring it is Asparagus). I also made the roasted fresh chile salsa from page158, for dipping the chicken in. Everything was great. To round out our meal I cooked some kale our cousin picked for us and made some Mexican cornbread. We had a feast.
