A very nice omelette that you can also eat as a light meal. Serves three, we shared it between the two of us, but we had also just come home starving, so I guess that doesn't count. We added shrimps, though I probably wouldn't do it again, they didn't go well enough with the tomatoes. It was new for us to make an omelette in the oven, but it worked perfectly well, only that it needed a few minutes more than stated.

Made this without rocket and with sliced and quartered zucchini/courgette, cooked until nearly done before I added the tomatoes. Also, I used dried thyme and tarragon instead of fresh herbs (not sure how much - def. could have been more), and only seven eggs instead of eight. And I used my new 10'/26 cm cast iron pan. It worked very well! There are two things I'd do differently: I'd add a bit of garlic, and I might coarsely grate the zucchini as it took an awful long time to cook them.
