I would not use this recipe again and I should have realized the issue with the recipe before I ever grilled the shrimp. The shrimp sits in a marinade for an hour (per the recipe) of EVOO, minced garlic and onion, parsley, and lime juice. And that last element caused the problem as it begins to "cook" the shrimp well before it goes on the grill. The end result was tough, rubbery shrimp. I should have left the lime juice out of the marinade and squeezed it on the shrimp after grilling.
