A very interesting and tasty dish. As always, I enjoyed that this was a dish with pumpkin other than the obligatory pumpkin soup or mash (for other ideas, see for example my Pumpkin Tortellini Casserole with Sage & Parmesan).

I was a little astonished, though, that this recipe should qualify as a stir-fry as the pumpkin is basically cooked in liquids. However, apparently it is a stir-fry nonetheless (see comments 9 & 10 on the blog).

Tastewise I enjoyed the dish very much, although the pumpkin ended up being a little too mushy (I might have cooked it for more than the required five minutes…), which meant that only the dried shrimp really gave you something to bite on. I’ll definitely try this recipe again (one day…) with the crispy stir-fry method Kian mentions in his last comment.
